Summary

Air flow patterns in beef chilling have been investigated at the Meat Industry Research Institute of New Zealand (Mr Lovatt won an IIR price for his work in this field), using a model containing water and hydrogen bubbles for two-dimensional flow visualization. It was concluded that the chilling process, and hence product quality, can be improved by considering evaporator and fan positions, room loading and air mixing devices.
