Summary

Sodium lactate (4%), postassium sorbate (0.3%) and nisin (400 IU per millilitre) listericidal activity, with or without nitrite (125 ppm) or polyphosphate (0.5%), was studied for pH 5.5 and at 4 deg C. A sorbate-nisin mixture gave the best results for inhibiting Listeria monocytogenes.
