Summary

INFLUENCE OF FREEZING PROCESS ON BACTERIA SURVIVAL IN FROZEN FOOD HAS BEEN TESTED. RELATIONSHIP BETWEEN THE TYPE OF FOOD PRODUCT AND VITALITY OF BACTERIA HAS BEEN CONFIRMED. DURING MICROBIOLOGICAL TESTS THE METHOD PROVIDING RESCUE OF LIVING AND DAMAGED CELLS WAS APPLIED ESSENTIALLY IMPROVING QUALITY OF FOOD PRODUCTS.
