Influence of temperature and atmosphere composition on the qualities of grated beet roots.

Summary

The influence of temperature and atmosphere composition on the quality of grated beet roots (Beta vulgaris L) were evaluated. Grated beetroots were packed with films with different gas permeabilities in plastic trays and were stored at 0 and 4 deg C during 7 days. After the storage period the market life was evaluated at 20 deg C. Atmosphere composition, pigment and sugar levels and pH were determined. Microbiological analysis were realized. Results are given.
