IN PRACTICE, THE COLD CHAIN IF OFTEN BROKEN DURING DELIVERY AN D IN THE STORES. THIS EXPERIMENT'S AIM WAS TO DETERMINE APPROPRIATE MEANS TO PROTECT THE PRODUCE DURING DELIVERY AND SALE. AT 25 DEG C, THE USE OF POLYSTYRENE BOXES EQUIPPED WITH EUTECTIC RESERVES REDUCES BY 10 DEG C THE TEMPERATURE RISE OF THE PRODUCT IN COMPARISON WITH OPEN CARDBOARD BOXES.
