Summary

During retail display unwrapped meat is particularly vulnerable to evaporative losses. The product storage temperature is time to time difficult to maintain below the prescribed value in this kind of cabinet. Adding water droplets in the air allows heat transfer intensification and reduces meat dehydration. Results about effects of humidification system on meat appearance and weight losses are assessed in this present article.
