Summary

Beef cubes placed in or out of a broth (trypticase peptone-starch-beef extract-yeast extract) with or without glucose (0.5%) were inoculated with L. monocytogenes and L. bavaricus, conditioned under vacuum and stored at 4 or 10 deg C. Investigation of growth of 2 types of bacteria, pH and bacteriocine production. The pathogens were inhibited by L. bavaricus. The inhibition was higher at 4 deg C. A high level of L. bavaricus inoculum and the glucose-based broth facilitated inhibition.
