Summary

Listeria monocytogenes is inoculated into raw ground beef. At 4 deg C the count remained constant during 6 days of storage. At -18 deg C there is no change during 4 weeks. Then, the counts decrease by 2 to 3 orders of magnitude during the last 3 weeks of storage. Certain additives slightly reduce the counts in the sausages or broths (sodium nitrate, potassium sorbate).
