THESE TESTS ON THE INSTANTANEOUS COOLING OF COLLECTED MILK TO 277-279 K (4-6 DEG C) BY A PLATE EXCHANGER, WITH PUMPING OF CHILLED WATER SUPPLIED BY AN ICE STORAGE TANK, WERE CARRIED OUT ON 12 FARMS IN THE NORTH OF FRANCE. PROVIDED THE EXCHANGER IS IMMEDIATELY RINSED WITH COLD WATER, SUCH A PROCESS GIVES A MILK WITH SATISFACTORY BACTERIOLOGICAL QUALITY (LESS THAN 100,000 MICROORGANISMS/CM3). THE EQUIPMENT REQUIRED IS SUITABLE FOR FARMS WITH AT LEAST 40 COWS, WITH SUFFICIENTLY QUALIFIED FARMERS. ECONOMIC PROBLEMS ARE STUDIED. G.G.
