Summary

Chilled water medium can be a potential reservoir for psychrotrophic environmental pathogens such as Listeria monocytogenes, Yersinia enterocolitica, and Yersinia pseudotuberculosis. To protect pasteurized dairy products from potential contamination, this paper recommends modifying requirements for both HTST pasteurizers and non-HTST pasteurized product heat exchanger cooling systems, to ensure that chilled water medium cannot, under any condition, leak into pasteurized product section.
