Summary
Investigation of the colour stability of unblanched Brussels sprouts stored at -3, -11, -20 and -27 deg C, showed that lightness and chroma did not change considerably, contrary to the hue angle. It moved in the direction of yellow hue, most quickly in samples stored at -3 deg C and most slowly in samples stored at -27 deg C. The parameter denoting the amount of brown colour, did not change appreciably during the investigated storage period.
