Summary

The twentieth session of the codex Committee on fish and fishing products was held in Bergen, Norway, from June 1 to 5, 1992. The report contains, in particular, recommendations on surimi, quick-frozen fish, hygiene in fish and fishing products in modified or controlled atmospheres. It also presents microbiological specifications for quick-frozen crab meat. It reviews the methods for analyzing fish and sea products, including determination of the net content of quick-frozen blocks of fish covered with frost, method of thawing quick-frozen blocks of fish, etc.
