Keeping quality and temperature, quality limits and initial quality.

Summary

A model was developed based on fundamental chemical kinetics, in combination with a massive simplification of reactions governing the behaviour of product quality. At the same time the model describes and predicts the influence of changing initial condition as well as changing acceptability limits on the behaviour of keeping quality. Validity of this aspect of the model has not yet been checked by lack of measured data. A dynamic version of the keeping quality model could be formulated and implemented. Description of the model and its application in chain describing and optimizing computer program's, in static as well as dynamic form, are indeed very promising.
