Identification of various yeast colonies in musts maintained at 5 deg C and measurement of their fermenting capacity at 10-25 deg C. The oenological characteristics of the colony G1 of Saccharomyces cerevisiae are not modified in an unfavorable way by fermentation at 10 deg C.
