Summary
Technologies used by the oenologists have been significantly improved during recent years.The Influence of temperature in the different stages of the process were studied and understood, and solutions for better temperature control were proposed. Liquefied C02, providing both efficient cooling power and inerting, is an interesting solution. This paper presents different technologies that can be used with direct injection of C02, for grape cooling.
