Summary

SOY BEAN OIL AND NUMEROUS VEGETABLE OILS CAN BE EXTRACTED FROM SEEDS GROUND BY LIQUEFIED GASES OR SUPERCRITICAL FLUIDS. CO2 IS WELL ADAPTED TO THE FOOD INDUSTRY, IT IS NOT TOXIC AND NOT INFLAMMABLE. IT CAN BE EASILY REMOVED FROM OIL AND OIL CAKE. THE OILS EXTRACTED BY CO2 CONTAIN LESS PHOSPHOLIPIDS THAN THOSE OBTAINED BY MEANS OF HEXANE.
