Listeria monocytogenes growth in ready-to-serve salads.

Summary

The development of mesophilic aerobic bacteria, lactic bacteria and Listeria monocytogenes was monitored at different temperatures in ready-to-eat salads containing only raw endives or a mixture of raw endives and a cooked ingredient. The mesophilic aerobic bacteria developped similarly in both types of products, but the growth of lactic bacteria and of Listeria monocytogenes was promoted by the presence of the cooked ingredient for storage temperatures higher than 3 deg C.
