Critical remarks on the use of predictive microbiology for minimally processed vegetables. A case study on endive.

Summary

The paper explains the principles of simulation of microbial development, as a simple element and in simple environment conditions. The difficulty is in determining the conditions under which one can go from a simple simulation to one closer to actual food conditions. A study with Pseudomonas marginalis and a very lightly processed vegetable such as chicory are presented.
