Summary

Propionicin PLG-1 proved to be very stable to storage, especially in the lyophilized state, at the temperatures tested in this study. This bacteriocin was effective against the indicator organism Lactobacillus delbrueckii in buffer, broth, and skim milk. However, further studies of the effectiveness of the bacteriocin on the contaminant microflora present in a specific food system would be required before its practical application in that system.
