Summary
The per capita consumption of meat and poultry in the USA continues to rise while that of sea food continues to decline. This in spite of the healthier aspect of fish as a low cholesterol food and effort by food processors to reduce the fat content of batters and other coatings. The main consumer criticism is however price particularly in comparison with poultry. However, the industry feels that demographic changes, increasing minority populations and improvements in labelling and transportation will help to reverse the present trend. G.R.S.
