Summary

THE AUTHORS PRESENT A MATHEMATICAL DESCRIPTION AND A SOLUTION TO THE PROBLEM OF NON-STATIONARY HEAT AND MASS TRANSFER DURING MEAT FREEZING. BASED ON TEST DATA, A RELATIONSHIP WAS OBTAINED BETWEEN THE COEFFICIENT OF RESISTANCE TO EVAPORATION AND THE OVERALL SHRINKAGE OF THE PRODUCT. CALCULATION AND TEST DATA ARE COMPARED. CALCULATED RESULTS AREDISCUSSED.
