Summary

Fruits of eight peach/nectarine cultivars were harvested at 3- to 5-days intervals, stored for 1 or 2 weeks at 0 deg C followed by 1 day at room temperature and assessed for firmness and colour. For 2 cultivars (Andross and Rosa del West peaches) firmness decreased linearly with time whereas for the other 6 cultivars it decreased curvilinearly. It is proposed that on the basis of changes in firmness and colour, fruit pass through 3 ripening stages each requiring different postharvest treatments.
