Summary

A factory for preparing ready-to-use salads is described. It includes two areas: a normal area and a sensitive area where salad treatment, production and conditioning takes place and which is supplied with superpressurized and filtered air. The only passages between them are airlocks. Principles of flow convergence and proximity of delivery areas were primary concerns when designing the factory. Special care was given to the working conditions. Dirty water treatment, economical use of water, liquid waste sorting and elimination were closely studied. A supermodern shipping platform completes the plant. The staff receives an in-house training and was involved in the design of the factory. J.L.
