Within the Concerted Action "Evaluation of Fish Freshness" total viable counts, differential counts and counts of specific spoilage organisms have been related to the remaining shelf life of various fresh fish products. The paper describes the approach to application of microbial methods and predictive modelling used within the Concerted Action.
