Summary

Traditional methods in fish microbiology are labour intensive and time consuming, taking up to five days to estimate the total viable count of a sample. A range of rapid and differential methods are described and examples given where these are applicable to fish microbiologists. The relevance for use in measuring fish freshness is discussed.
