Summary
Microbiological criteria in military and federal specifications for foods purchased by these agencies for their own use were first presented in 1976. At that time, 59 of approximately 600 food specifications contained microbiological requirements. As of 1996, 38 military and federal specifications, covering approximately 78 food commodities, contain microbiological requirements. Some specifications are described, in particular for ice cream, ice milk, sherbert, novelties and mixes and frozen egg and egg products.
