Summary

The European dairy industry has at its disposal technology making extensive use of complex microbiological equilibria; this technology ensures consumer safety and also product attractiveness. It is based on solid scientific and technical experience and various examples are presented and discussed in detail in this issue of "Comptes rendus de l'Académie d'Agriculture de France" which contains 8 papers from the conference on this theme held in Paris, France, on April 2, 1997.
