Summary

The riskiest stages seem to be refrigeration and slicing. The pathogenic flora which have traditionally been studied are little in evidence. Aerobic Mesophile flora is a reliable indicator of the bacteriological quality of the surface of the hearts. Estimatint it is simple and inexpensive.
