Summary

Different lots of chilled minced beef variously prepared and packaged under modified atmosphere were examined. The results of the microbiological controls and the sensory characteristics demonstrate that the shelf life of chilled minced beef might be longer than that established by the Italian rules (DPR 227). It is possible moreover to ensure adequate hygienic conditions for the commercialization of some chilled meat preparations made with minced beef.
