Summary

The temperature of food during refrigerated transport is the result of an interaction between the climatic conditions, the refrigerated vehicle and its associated refrigeration equipment, the way the vehicle is used and the stowage and packaging of the food concerned. The paper describes a mathematical model which predicts the thermal response of food during refrigerated transport taking into account all the interactions mentioned above.
