Summary

A MODEL OF RANDOMLY DISTRIBUTED PORES WAS USED FOR THE STUDY OF THE THERMALLY CONTROLLED FREEZE-DRYING OF FROZEN SOLU THE METHOD IS THAT OF FINITE DIFFERENCES APPLIED TO UNIDIMENSIONAL HEAT TRANSFER. FOR ITS NUMERICAL SOLUTION THE THERMOPHYSICAL PROPERTIES OF PRODUCTS AT DIFFERENT STAGES NEEDS TO BE KNOWN. FOR A 0.9 POROSITY AND FOR BOTH INITIAL MATERIAL DISTRIBUTIONS GIVING MAXIMUM AND MINIMUM FREEZE-DRYING TIMES, THE AUTHORS DISCUSSTHE EFFECT OF SURFACE TEMPERATURE, MAINTAINED CONSTANT OR VARYING, ON THE FREEZE-DRYING TIME. THEY ALSO GIVE THE TEST RESULTS OF THE FREEZE-DRYING OF CARROT JUICE.
