Modified-atmosphere storage of gombos.

La conservation du gombo en atmosphère modifiée.

Author(s) : SY O., NDIAYE M., NDIAYE S.

Summary

Samples of gombos (okra) of 8 to 10 cm (local variety), harvested 45 days after planting, were stored at 8 deg C at a relative humidity between 80 and 85%, in perforated or non-perforated polyethylene bags of 50 and 100 microns. The longest cold-storage time obtained was 21 days in non-perforated bags containing 4 to 12% carbon dioxide and 2 to 5% oxygen. During this period, vegetables kept their freshness and firmness, with acceptable weight losses (8%). On the other hand, shelf life was limited to 14 days in perforated bags where fungal and physiological deteriorations were more pronounced.
