Summary

Modified-atmosphere storage of fresh products has been used for a long time. For packaging, scavenging and vacuum technologies are used. Packaging materials are often made from three-layer systems with several functions: good sealing; oxygen, CO2 and water-vapour barriers, and mechanical resistance. Various gaseous mixtures are used, according to product type: dry, intermediate and high moisture products, and are controlled. However, it is mainly for ready-to-use products, i.e. cut fresh vegetables, that this technology gives the best results because of its ability to reduce wound stress resulting from cutting, as shown by the studies of Mr Varoquaux at the INRA in Montfavet (France) concerning physiological, biochemical and microbiological aspects of this phenomenum which is specific to ready-to-use products.
