Summary

A bibliographic review of contamination risks of prepared foods by pathogenic bacteria, in particular by Listeria monocytogenes, Clostridium botulinum and Bacillus cereus is presented. The risks for public health are evaluated and stragegies for quality control and contamination risk reduction are given.
