Multiplication of psychrotrophic pathogens on meat stored under modified atmospheres.

Summary

The paper deals with the multiplication of Listeria monocytogenes, Aeromonas hydrophila and Yersinia enterocolitica on meat and poultry and summarizes the main results obtained by the group in terms of the multiplication of these pathogens on pork (pH= 5.5) and turkey (pH= 6.0) stored in air, 100% nitrogen, CO2/O2 (20/80 and 40/60) and maintained at 1 and 7 °C. Special care should be taken at 7 °C, even when the atmosphere contains 40% CO2 particularly because the multiplication of L. monocytogenes and Y. enterocolitica is not prevented by this CO2 concentration, although it is slowed down.
