Summary

In aquaculture, the slaughter method is one of the most stressful stages due to long agony and suffering on farmed fish. In terms of fish welfare, the main goal of this work was to achieve a rapid loss in consciousness, decrease stress levels and also improve the conservation of refrigerated quality of farm fish. Thus, we designed a new technology of slaughter with anaesthesia using clove essential oil (CEO) encapsulated in beta-cyclodextrins (β-CD), embedded in the ice crystals. Rainbow trout was used as a model due to its world aquaculture production importance. Thus, we tested low doses of CEO+β-CD embedded in crushed ice. Our results showed a decrease of induction times of anaesthesia and also lower levels of plasmatic stress parameters in fish treated with CEO+β-CD, compared with control group. Parallelly, farmed fish treated with CEO+β-CD does not significantly increase the initial level of CEO residue that fish already had.
