Summary

A METHOD OF FREEZE-DRYING CUT-UP FOODSTUFFS AT ATMOSPHERIC PRESSURE IS DESCRIBED. THETRANSFERS ARE CARRIED OUT IN AN ADSORBENT FLUIDIZED BED OF STARCH PELLETS MADE FROM PREGELATINIZED CORN. THE ADVANTAGES OF THE PROCESS ARE LOWER COSTS AND MAINTENANCE OF THE PROPERTIES OF THE PRODUCT. ON THE OTHER HAND, THE OPERATION TAKES LONGER THAN TRADITIONAL FREEZE-DRYING.
