Summary
The aim of the study financed by INTERBEV and OFIVAL was to contribute to the emergence of new products. The report reviews the results of research and development and product innovation in the French bovine and ovine sector between 1975 and 1996, and analyses the products offered (abroad and in other sectors) and the needs for 2005-2010 in terms of the downstream operations of the bovine and ovine sectors. 19 directions for innovation were selected. For each of them, the following information is supplied: concept, raw materials, packaging, market, level of adaptation to downstream requirements, manufacturing principles and manufacturing chart. Extract from the table of contents: preliminary analyses; definition: testing directions for innovation; characterization of pertinent directions for product innovation (24 innovative product sheets: snack food to be stored at chilled or ambient temperatures).
