Summary
Harvested persimmon cv. Fuyu fruits were stored in individual polyethylene bags (modified atmosphere storage) or unbagged (control) at 0 deg C for 6 weeks. The development of chilling injury was monitored non-destructively using NMR imaging. Changes observed by NMR imaging during the period of degradation were consistent with visual observations describing the development of the disorder in this crop.
