Summary
Based on its physiology, spiny lobsters are being packed live for export from southern India. The authors present materials, precautions to be taken in the cooling or prechilling of lobster, the preparation, and some hints for exporters, especially for fresh moult and pre-moult lobsters. Since there is a definite semi-lunar moulting rhythm in spiny lobsters, it is better to avoid packing the premoult lobsters 2-3 days prior to the new moon and full moon.
