Summary

The results of the bacteriological analysis performed on 369 samples of meat and meat products are shown. 47 strains of Listeria monocytogenes, 39 of Salmonella, 12 of Staphylococcus aureus and finally 9 strains of Yersinia enterocolitica were isolated. The research shows that the "microbiological indicators" are not suitable to detect the psychrophilic pathogens.
