Summary

The authors discuss the results of the bacteriological analysis performed on 1898 samples of food products. Different kinds of products were analyzed. Quantitative analysis (aerobic plate count) and qualitative ones (coliforms, pathogenic bacteria) were performed. 48 strains of Listeria monocytogenes, 46 of Salmonella, 46 of staphylococcus aureus, and 13 strains of Yersinia Enterocolitica were isolated. The research shows that the "microbiological indicators" are not suitable to reveal the psychrotrophic pathogens.
