IT IS IMPORTANT TO MONITOR THE TEMPERATURE OF CHILLED FOOD-STUFFS, FROM THE PRODUCTION SITE TO THE CONSUMER. THE ARTICLE GIVES TEMPERATURE RECORDINGS IN DISPLAY CABINETS FOR FRESH PRODUCTS. NEW REGULATIONS WILL STRENGTHEN TEMPERATURE CONTROL IN RETAIL STORES, BUT AFTERWARDS, THE TIME-TEMPERATURE HISTORY OF THE PRODUCT IS THE CONSUMER'S RESPONSIBILITY. RESULTS ARE GIVEN OF MEASUREMENTS TAKEN WITH MINI-TEMPERATURE RECORDERS ATTACHED TO THE PRODUCTS.
