Summary

The study demonstrates the chilling-sensitive nature of bitter melon, with typical injury symptoms of pitting, decay and discoloration occurring when the immature fruits were stored below 10 deg C. These chill-induced changes were associated with increases in respiration and ethylene production to higher than normal rates after transfer to 15 deg C. Storage at 10-12.5 deg C maintained acceptable product quality for 10-14 days. Controlled-atmosphere storage can retard undesirable developmental-related postharvest changes, but its potential usefulness requires further investigation.
