Summary
There is a great variety in the postmortem structural changes in fish muscle proteins for different species of fish. However there are key changes that are common even though different species undergo these changes to a different extent and at different speeds. The work reviews the postmortem structural changes in fish muscle proteins and the instrumental methods used to evaluate the changes.
