Summary

Rigor mortis of cultivated Atlantic salmon (Salmo salar) began to set in 8 hours after death and was fully resolved 60-70 hours after death during storage at 0 deg C. Maximum muscle contraction was observed 24-30 hours after death. ATP, inosine and hypoxanthine content were measured. Postmortem changes affected salt uptake. Results are given.
