Summary
THE PH OF REDUCED-MOISTURE SOLID SYSTEMS IS DIFFERENT FROM THAT IN THE HYDRATED STATE. THE KINETICS OF ASPARTAME DEGRADATION IN THE FORM OF PH-RATE PROFILES GENERATED FROM A NON-SOLUTION GEL AT HIGH AND LOW MOISTURE CONTENTS SHOW DIFFERENCES WHICH CANNOT BEEXPLAINED SIMPLY BY DIFFERENCES IN MOISTURE CONTENT. THE PATTERN OF ASPARTAME DEGRADATION PRODUCT FORMATION INDICATES THAT THE SYSTEM PH IS LOWER AT THE LOWER MOISTURE CONTENT.
