THE PROCESS DEFINES THE FREEZING REGIME NECESSARY TO ENSURE THAT COLD SHORTENING IS PREVENTED AFTER THE CARCASS HAS BEEN ELECTRICALLY STIMULATED. THIS PAPER SETS OUT TO DEMONSTRATE THE APPLICATION OF THE ACCELERATED CONDITIONING SPECIFICATION FOR LAMB CARCASES. BATCH BLAST FREEZERS AND A CONTINUOUS TUNNEL FREEZER ARE CONSIDERED IN RELATION TO AIR TEMPERATURE, AIR FLOW AND VELOCITY, CARCASE STACKING AND CARCASE WRAPPING. THE EFFECTS OF THESE VARIABLES ON FREEZING TIME ARE EVALUATED. THE FREEZING CHARACTERISTICS OF THE PRODUCT ARE MONITORED.
