STIMULATION ACCELERATES THE CHEMICAL CHANGES LEADING TO RIGOR MORTIS. ACCELERATED CONDITIONING IS A PROCESS EMBODYING ELECTRICAL STIMULATION AND DEFINED TIME-TEMPERATURE CONDITIONS, TO PRODUCE TENDER LAMB. FOR BEEF, HIGH OR LOW VOLTAGE STIMULATION SYSTEMS CAN BE USED. A RELATIVELY SLOW CHILL WOULD REQUIRE ONLY A SLIGHT ACCELERATION OF RIGOR, WHEREAS RAPID CHILLING OR EARLY FREEZING OF HOT BONED BEEF REQUIRES A MAXIMUM ACCELERATION OF RIGOR.
