Summary

Moist cooling was compared to more conventional methods during a study done over three harvests. The results showed clearly that moist cooling brings the temperature of pallets of melons down efficiently and limits changes in quality. One of the most important parameters for controlling quality proved to be the time elapsed between harvest and initial cooling.
